Penne Boscaiola

This was beyond yummy!!!

The husband to be, boy child and girl child all loved it. Not exactly health food, but I guarantee everyone will eat it up and ask for more! Unfortunately we ate all my garlic bread before I could take a photo.

Penne Boscaiola

Servings: Serves 4
Recipe Source: I kinda read a bunch of recipes and made it up.
Weight Watchers Pro Points: 2 pro points per serve (31 for the whole recipe)

Ingredients

  • 400g dried penne pasta
  • 25g butter
  • 4 cloves garlic, crushed
  • 1/2 bunch spring onions, chopped
  • 200g mushrooms, sliced
  • 125g bacon, chopped
  • 300ml thickened cream
  • 2 tbs chopped parsley
  • 1/3 cup finely grated Parmesan

Directions

  1. Cook pasta according to packet directions.
  2. Meanwhile, heat butter in a large, deep frying pan over medium heat. Add garlic and cook for 1 min, until fragrant.
  3. Add spring onions, mushrooms and bacon and cook for about 4 mins, until softened.
  4. Add cream, stir through and reduce heat to low. Allow to summer for about 5 mins, until slightly thickened.
  5. Add pasta, Parmesan and parsley. Season and stir through. Serve immediately with salad and/or garlic bread.

Notes

I wouldn't recommend reheating this - the cream always splits for me. However, I top any leftovers with cheese and breadcrumbs and chuck it in the oven to make a pasta bake. Nom nom nom!
